LEFTOVER'S  RECIPES 

Whether it's meat, veggies or anything else you have, we've some cunning money-saving ways to help you use up your leftover ingredients.
COOK ONCE, EAT TWICE

WE  LOVE FOOD, AND HATE  WASTE!!! 
We love leftovers. Can you imagine cooking once and then having a tasty meal which is partially prepared and allowing us to save our time and money?

Here are some great recipes created with leftovers from the fridge.
We call them “RESCUE RECIPES”:

1.   Chicken salad (with roast chicken leftover) (Gemma)

1. Put the salad in a large platter. Quarter and slice apples and anything you like (carrots,celery, radish,onions). Chop walnuts. Scatter everything over the salad. Cut the chicken into small cubes and scatter over the top.
2. Mix together all the dressing ingredients in a small bowl, and then drizzle over the salad just before serving.
2.   Hummus: (Bàrbara)


Leftover cooked chickpeas, crushed with sesame seeds or pulp (1 tablespoon per 100 grams of chickpeas), olive oil and a squeeze of lemon juice, become an excellent cream to spread on bread or to accompany other foods. This is known as hummus and is typical of the cuisine of the Arab countries.
                                                                             

3.   Cream of lentils (Amanda)

Lentils are transformed into a delicious cream by adding a boiled potato and broth. Once crushed everything, season with salt and pour a splash of cream on top.




4.   Rice salad with Roast  chicken  leftovers (Naiara)


Ingredients
rice
Peeled prawns (optional)
green peas
salt
oil

Boiled egg or omelette



Preparation
1.    Fill a casserole with water, put salt, and when it boils add the rice. Let it cook for twenty minutes. Fill another casserole to boil the peas (15 minutes), and if you do it with boiled egg, fill another casserole for the egg (20 minutes)
2.    While the rice, the peas and the egg are boiling, take the peeled prawns and fry them in a frying pan. When you finish, leave them in a plate.
3.    If you put an omelet instead of a boiled egg, take an egg and make an omelet.
4.    When the rice, the peas, and the egg are cooked, clean the rice, and then put it in a plate. Add the peas and the peeled prawns.
5.    Take off the eggshell, and cut the egg in small pieces and add into the plate.. If you do an omelet, cut the omelet in small pieces, and put it in the plate.
6.    Take the roast chicken leftovers, cut it into small pieces, and add them into the plate.
7.    Finally put oil, and you have the rice salad finished.

5.  Roast chicken Risotto: (Paula)

Ingredients:
butter
1 onion , finely chopped
2 garlic cloves , finely chopped
350g risotto rice
1 large glass white wine
a large handful frozen peas , defrosted
cooked chicken , torn into strips, no skin
50g Parmesan , grated
1½ l chicken stock , heated to simmering (vegetable stock can be substituted)
                                                                   
Preparation

1.    Melt a knob of butter in a large pan, add the onion and garlic and cook until soft and translucent. Stir in the rice until coated with butter.

2.     Add the wine and stir until evaporated. Add the stock a ladle at a time until the rice is cooked but still with a little bite (add the peas and chicken in the last 5 minutes of cooking to heat through). The rice should be creamy but firm to the bite.

3.    Stir in the Parmesan.
6.  Meat cake  with Leftovers (Víctor)


Ingredients

Tomato sauce
Cheese




Preparation
If you have a leftover of meat, you can make a meat cake with smashed potatoes. It’s easy. You have to prepare tomato sauce for the meat. You have to put the smashed potato in the base, in the middle the meat, and again the smashed potato. And finally cheese and put it all in de oven to grill.

7.  Croquettes with leftovers: (Naiara)

Ingredients
300 g chicken breast
50 g of ham
150 g of onions
50 cc of oil
30 g butter
2 large tablespoons of flour
200 cc of milk
Salt and nutmeg

Preparation

1. cut the chicken breast and fry with oil.
2. Add butter and when this is melted we add flour.
3. Add milk, mix it all and let it cook for two minutes.
4. Add salt and nutmeg. When you take out the mass of the fire, add egg yolk and mix it.
5. when the batter is cold, do the croquettes and cover this with grated bread.
6. finally fry them.
                                                                                                             
 8. Leftover of meat: Cannelloni (Víctor)

Ingredients:
Leftover of meat.
Tomato sauce.
Paste wafers.
Cheese sauce.
Preparation:

1-Crush the leftover meat, and add to this mix the tomato sauce.
2-Put this mix to fry, and remove the mix after 10 minutes.
3-Now boil the paste wafers, and drain them.
4-Put the meat and tomato into the boil paste wafers, and roll the paste wafers with the mix them.
5-Put the cannelloni into a recipe, cover the cannelloni with the cheese sauce and put it into the oven for 10 minutes.
6-Now you can eat them and enjoy the cannelloni’s do it with leftovers.
                                                                                     
9. Omelette (Patricia)

 We have to recycle, reuse and reduce, we know it. But not only paper or plastic can be reused, food also could. For this reason, our mothers and grandmothers have been since long ago, making special dishes to reuse the leftovers. There are many examples. Now, I’m going to explain one of my family recipes made up from leftovers.
When my grandmother is going to cover with batter the meat for all the family, she uses one or two eggs and breadcrumbs. Finally, there’s always part of the batted eggs left. For this reason she takes a skillet and oil, and makes an omelette. I said it, it’s very simple, but it is also practical and efficient.
Remember, we have to do a better and green world, and with many little things in our lives we will help to do it. 

10. MEATBALLS: (David) Leftover: Meat.

Preparation:
With meat that has left from other meals you can make meatballs, it is very easy. First you have to cut the meat in small pieces, then take an onion and cut it up and fry it together, add some milk, and very slowly add some flour, to make a mixture, when everything is cold, you have to make balls and cover every one with egg and breadcrumbs and finally fry the meatballs in a very hot oil.


11. Chicken with rice (Maria)












Ingredients:



  Leftover of chicken
  Rice
  Water
  A pot
  Preparation:
You need first a leftover of chicken and a little bit of rice.
First defrost the chicken and prepare the rice.
Put the rice in the pot and then pour some water. Boil it for about 15 min.
Then add some sauce because the chicken will be dry.
12. OMELETTE  WITH  LEFTOVERS (Anna)

 Ingredients:

Eggs
Vegetables (leftovers)





When my father makes a vegetables salad and we don’t finish it, the following day, he uses the leftovers to make an omelette.

First he mixes the leftovers with beaten eggs. Then he pours it in the frying pan and he makes the omelette.
